Instant Pot French Onion Soup made with beef broth collagen and topped with a toasted melted gruyère cheese baguette!
French Onion Soup quickly became my personal obsession since I reluctantly tried for the first time just a little over a year ago. The original recipe can be found here along with the full story if you care to read.
My love for French Onion Soup however, is not shared with any other member of my family. I can’t decide whether this is a good thing or a bad thing, but it’s the reason I call it -a personal obsession. When I make this soup, I know it is all mine and honestly I don’t feel bad about it at all 🙂
The downside is that, maybe I won’t make it as often as I would like to eat it.
I hate when these types of problems arise!
Just the other day I ran into a friend who shared the same dilemma. For a young girl only in her teens, she had proudly made my Easy Homemade French Onion Soup hoping to fill everyone’s plate but no one else was open to it. Onion haters perhaps?
Either way, her story and my story ignited some type of solution-activation mode in me, and before I knew I was in the kitchen trying to figure out 1. how do we “french onion soup lovers” keep the interest alive for ourselves 2. how to get others to try French Onion Soup (do they need an extra motivation?).
Truth is, French Onion Soup isn’t like Butternut Squash Soup that you toss a few ingredients in a pot and a few minutes later you have soup. French Onion Soup does require some babysitting, or onion-sitting I should say which might make you think twice about it. At least it has been an issue for me which is why I came up with solution no. 1

The magic pot does an amazing job at caramelizing the onions without making you it’s personal slave. This totally solved problem no.1 for me and if you try this method, you will see a big difference for yourself.
French Onion Soup on Steroids
Let’s face it. Soup isn’t just soup anymore. Nowadays people are looking deeper into the pot. What’s in for me? What are some of the benefits I can reap from this soup? I know this has been true for me as it has been my focus point to eat with will help improve my health. In fact, this is what excites me the most about food!
Instant Pot French Onion Soup With Beef Broth Collagen
Bone broth is essentially a stock that is made from animal bones and connective tissues that is known to support join and ligament health as well as to promote healthy immune and digestive systems.
I exclusively use Vital Proteins Bone Broth Collagen because it is made using bones from grass-fed, pasture-raised cows, it is the first USDA Organic bone broth powder, whole30 approved, MSG free, and low in sodium. The simple addition of bone broth collagen to the French Onion Soup increased it’s benefits, making it more likely that others will try, and perhaps realize that French Onion is simply delicious and you can’t live without it!
Instant Pot French Onion Soup
Ingredients
- 3 large white onions, sliced thinly
- 5 tbsp unsalted butter
- 1 pinch sea salt and ground black pepper, to taste
- 1/2 tbsp brown sugar
- 1/2 cup dry white wine
- 6 cups water, warm
- 6 scoops Vital Proteins Beef Broth Collagen
- fresh thyme sprigs
- 1 loaf french baguette
- fresh gruyère cheese, grated
Instructions
- Turn instant pot on sauté mode. Add butter and allow it to fully melt
- Add onions, give it a quick stir and cover the pot loosely. Sauté the onions for about 15 minutes, stirring occasionally.
- Remove lid, season with salt and pepper. Add sugar and continue to sauté for up to 5 minutes, stirring often until onions are golden brown.
- Add the wine. Scrape off the bottom of the pot and cook until most of the wine has evaporated.
- Meanwhile, dissolve the Vital Proteins Beef Broth Collagen in warm water. Then add in to the pot as well as the thyme.
- Cover the instant pot and turn pressure valve in lock position. Cancel the sauté mode and manually select high pressure for 6 minutes.
- Once cooking is complete, quickly release the pressure.
- Meanwhile, pre-heat the oven to broil. Scoop the soup into ovenproof bowls and top with a baguette slice. Sprinkle gruyère cheese on top and place under the broiler for 3-5 minutes or until the cheese is melted.

Vegetarian version??
To make this recipe vegetarian you can just substitute the butter for vegan butter to brown the onion. As for the collagen that can be optional, use vegetable broth instead. if you have a vegan cheese that you like to sub the gruyere that works too
