Dinner for two is just what I had in mind. A quite, easy and comforting yet elegant dinner for Ron and I. Eating out this time of year can be a bit overwhelming and almost unpleasant at times. The long lines and exhausting wait to get a table at a restaurant can cost the fun of the evening. So I prepared this salmon for a delicious, elegant and romantic eat-in dinner, before we headed out to start our Holiday shopping.

As much as we enjoy grabbing a bite to eat during these Holiday shopping trips, it seems just as easy to head out with our bellies full. This way, it cuts down on the amount of time we spend at the mall and it’s much healthier too.

I don’t know about you, but we love eating salmon. I am sure by now you are well aware of the array health of benefits from eating salmon. So if you haven’t introduced salmon to your diet, I beg you to do so! Plus it’s very easy to make and there so many ways you can cook salmon. This salmon recipe came out so good that I had to make it again the next day. Luckily our kids love salmon too, so it’s an easy dinner choice that everyone will enjoy. The roasted cranberries are so juicy and bursting in flavor, BONUS they make this dish so pretty and festive 🙂

This is a recipe you must try! You absolutely can’t go wrong here and it’s fairly quick to make too. I know I will be adding this one to my list of holiday recipes. It will serve really nice on the table plus it allows me time to enjoy my guests.

Maple Soy Cranberry Salmon

Maple Soy Cranberry Salmon; dinner has never tasted better with this easy, quick and flavorful Salmon dish!
Prep: 5 minutes
Cook: 25 minutes
Total: 30 minutes
Servings: 2 servings

Ingredients 

  • 2 Salmon fillet
  • 1 cup fresh cranberries

Sauce

  • 1 tbsp olive oil
  • 1 tbsp maple syrup
  • 1 tbsp soy reduced sodium
  • 1 tsp dijon mustard
  • 1 tsp chilli pepper
  • 1 pinch fresh black pepper

Instructions 

  • Preheat the oven to 400F degrees. Place a sheet of parchment paper on a baking sheet.
  • In a small glass bowl whisk the sauce ingredients to combine.
  • Pour over the Salmon fillets equally. Add the fresh cranberries.
  • Bake for 20 minutes then broil for up to 5 minutes or until golden brown.
