- 2 lb bone-in beef short ribs
- 2 tbsp ghee (or butter)
- 1 large onion sliced
- 3 cloves garlic minced
- 3 tbsp tomato paste
- 1/3 cup coconut aminos use soy for keto
- 1/3 cup balsamic vinegar
- 2 cup bone or beef broth
- 1 bundle fresh thyme
- 1 bay leaf
- 3 tbsp flour (gluten-free flour)
Instructions
- Heat ghee (or oil) in a dutch over or cast iron pot. Add short ribs that are pre-seasoned with salt and pepper, to taste. Brown the ribs on all sides. Transfer to a plate (12-15 mins)
- Add onion and garlic to the pot. Sauté for 2-3 minutes. Then deglaze the pan with coconut aminos* and balsamic vinegar. Give it a good stir scraping the bottom of the pan to remove all bits and pieces.
- Add tomato paste and flour. Whisk well to combine. Add bone or beef broth.

We abstain from alcohol, and because of this I never remember cooking wine on my grocery delivery.
ANYWAY, we always have organic grape juice on hand, a nice splash of grape juice and a glug of coconut aminos in this recipe is so heavenly 💗 it’s a substitute that works!
I also throw in extra onion because the caramelization is to die for by the time it’s completed. I also never noticed the almond flour. Just wanted to add some commentary, that the lack of almond flour will not break the dish but it of course has a purpose 🙂

This was insanely good! I had about 2 cups of gravy left over that I was not going to let go so I froze it. A few weeks later I made a pot roast using that gravy as the base. The gravy had a chance to meld, marry, and mellow and it got sooooo much better. This will be my new go-to recipe from now on whether it’s short ribs or pot roast.
