They’re high in protein, made with Greek yogurt, and baked to golden perfection for a cozy breakfast or post-workout snack that actually feels like a treat.
This recipe is inspired by my popular High Protein Bagels, but this time I gave it a fall twist because once the cooler air rolls in, I can’t resist adding a sprinkle of cinnamon to just about everything.

Every fall, I find myself craving something cozy to bake and I can’t imagine I am the only one. Something that fills the kitchen with that warm cinnamon aroma and makes the morning feel just a little more special. These Cinnamon Sugar Protein Bagels do exactly that.
They’re soft, slightly sweet, and perfectly spiced with cinnamon, pumpkin spice, and a touch of clove. All those comforting fall flavors wrapped up in a wholesome, high-protein bagel. I love that they’re made with Greek yogurt (no yeast or long proofing required!) yet still come out light and satisfying, just like my original Protein Bagels recipe but like I said, with all the fall vibes.
And here’s the best part, they’re just as delicious warm from the oven as they are toasted the next day with a little butter, cream cheese or my latest obsession clotted cream (I got my recent visit to Scotland to thank for that!). I often make a batch on Sunday, and eat it all week long. Breakfast feels like a little fall treat!

Ingredients you’ll need
Take note of these few pantry staple ingredients you’ll need to make your new favorite cinnamon bagels. There are no substitution options for this recipe but you can omit some of the spices or use less, though it is perfectly balanced;
- 4 cups all-purpose flour
- 3 cups Greek yogurt
- 2 tsp baking powder
- 1 tsp cinnamon
- 1 tsp pumpkin spice
- ½ tsp ground cloves
Cinnamon Sugar Topping
- 1 cup sugar for topping + 1 tbsp cinnamon (mix of sugar + cinnamon)
- 1 tbsp melted butter












How to make cinnamon sugar bagels
Step 1: Preheat and prep.
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
Step 2: Mix the dough.
In a medium bowl, combine the flour and spices. Add the Greek yogurt and mix until a thick dough forms then transfer unformed dough to a flat surface or countertop. Use your hands to knead it a few times until smooth, as pictured above.
Step 3: Shape the bagels.
Divide the dough into equal pieces. Roll each one into a rope, then connect the ends to form a bagel shape.
Step 4: Brush and bake.
Place the bagels on your prepared baking sheet, brush with egg wash, and bake for about 25 minutes, or until golden.




Step 5: Make the cinnamon sugar topping
Add sugar and cinnamon to a shallow bowl and whisk to combine.
Step 6: Brush with butter and coat.
While the bagels are still warm from the oven, brush them lightly with melted butter and dip or sprinkle generously with the cinnamon sugar mixture. The warmth helps the sugar stick and creates that perfect, bakery-style sweet crust.
Step 7: Cool and enjoy.
Let the bagels cool for 10–15 minutes before slicing. Serve warm or toasted with butter, cream cheese, or a drizzle of honey.

Storing & Reheating
Keep leftover bagels in an airtight container at room temperature for up to 5 days or in the refrigerator for longer period.
To reheat, slice and toast for 2–3 minutes, they’ll taste freshly baked again!
You can also freeze them for up to 3 months. Simply thaw at room temperature or microwave for 30 seconds before toasting.
RECIPE TIP
Allow the bagels to cool completely before storing. If you cover or seal them while they’re still warm, condensation will form inside the container and make the bagels soggy.

- Place the bagels on your prepared baking sheet, brush with egg wash, and bake for 25 minutes or until golden brown.
- Meanwhile in a shallow bowl, mix together 1 cup sugar with 1 tablespoon of cinnamon. This will be your cinnamon sugar coating for the finish.
- Once the bagels are done and while they are still warm from the oven, brush them lightly with melted butter and dip or sprinkle generously with the cinnamon sugar mixture.
- Let the bagels cool for 10–15 minutes before slicing. Serve warm or toasted with butter, cream cheese, or clotted cream.
