Ingredients You’ll Need

One of the things I love most about this recipe is how a handful of simple ingredients come together to create a broth that tastes like it’s been simmering for hours (but it hasn’t!). Fresh mussels are the star, while fresh plum tomatoes, garlic, saffron, and coconut milk create a flavorful broth that’s perfect for serving with plenty of crusty bread.

  • Fresh Mussels – mussels are the heart of this recipe. Look for mussels with tightly closed shells. If possible ask when the mussels were delivered. If possible, buy your mussels the same day you plan to cook them.
  • Tomatoes – fresh ripe tomatoes add sweetness, texture, and brightness to the broth. I prefer using ripe vine tomatoes or Roma tomatoes because they break down beautifully while still leaving small chunks throughout the broth. You can substitute one 14-ounce can of diced tomatoes.
  • Onion & Garlic – a yellow onion and plenty of fresh garlic create the flavorful base for the broth. As they cook, they become sweet and aromatic, adding depth without overpowering the delicate mussels.
  • Seafood Broth – seafood broth enhances the natural briny flavor of the mussels and gives the broth extra richness. If you don’t have seafood broth, fish stock works well, and chicken broth can be used in a pinch, although the seafood flavor won’t be quite as pronounced.
  • Coconut Milk – the coconut milk adds a subtle flavor, it doesn’t make the dish taste like coconut. Instead, it adds a silky texture and gently balances the acidity of the tomatoes. I recommend using full-fat canned coconut milk for the richest flavor.
  • Paprika, Saffron & Red Pepper Flakes – these three ingredients work together to give the broth its signature flavor. Paprika adds warmth and a subtle smokiness, saffron lends a delicate floral aroma and beautiful golden color, while a pinch of red pepper flakes provides just enough heat to balance the sweetness of the tomatoes and coconut milk. The broth isn’t spicy, but the gentle kick helps bring all the flavors together beautifully.

Buy fresh mussels. This will make a big difference! choose mussels with tightly closed shells or shells that close when gently tapped. Discard any with cracked shells or any that remain closed after cooking.

Clean them well. Rinse the mussels under cold water and remove any beards before cooking. Most farm-raised mussels are already cleaned, making prep quick and easy.

Don’t overcook. Mussels only need a few minutes to cook. As soon as the shells open, they’re ready. Overcooking can make them tough and chewy.

Taste before seasoning. Seafood broth and mussels naturally add salt to the broth, so taste before adding more. Finish with a squeeze of fresh lemon to brighten the flavors.

Serve with plenty of bread. A warm baguette or crusty sourdough is the best way to soak up every last spoonful of the tomato coconut broth.

Two Ways To Serve Mussels in Tomato Broth

One of my favorite things about this recipe is that you can serve it two different ways, depending on the occasion.

For a more traditional presentation, serve the mussels right in their shells nestled in the flavorful tomato coconut broth. It’s perfect for entertaining and creates a beautiful, restaurant-style dish that’s meant to be enjoyed with plenty of crusty bread for dipping.

If you’re looking for an easier, more hands-off meal, simply remove the mussels from their shells before serving and return them to the broth. It transforms the dish into a cozy seafood soup that’s easier to eat, less messy, and perfect for enjoying with a spoon. I especially love serving it this way for a casual weeknight dinner.

What To Serve With Mussels

Ingredients 

  • 2-3 lbs fresh mussels
  • 2 tbsp olive oil
  • 1 small onion diced
  • 6 cloves garlic minced
  • 1 tsp paprika
  • 1/2 tsp red pepper flakes
  • 1/4 tsp saffron
  • 1 tsp sea salt
  • 1 tsp ground pepper
  • 3 whole tomatoes diced
  • 1 cup seafood broth or stock
  • 3/4 cup coconut milk
  • fresh cilantro
  • fresh lemon juice

Instructions 

  • Sauté the aromatics

    Heat the olive oil in a large cast iron skillet or deep sauté pan over medium heat. Add the onion and garlic and cook for 3 to 4 minutes, until softened and fragrant.
  • Cook down the tomatoes

    Add the diced tomatoes and continue cooking for about 5 minutes, stirring occasionally, until they soften and begin releasing their juices.
  • Season the broth

    Stir in the paprika, red pepper flakes, saffron, salt, and black pepper. Let the spices cook with the tomatoes for about 30 seconds to bring out their flavor.
  • Add the liquids

    Pour in the seafood broth and coconut milk, stirring well to combine. Bring the mixture to a gentle simmer.
  • Steam the mussels

    Add the cleaned mussels to the skillet and give everything a gentle stir. Cover and cook for about 5 to 7 minutes, or until the mussels have opened.
  • Finish with cilantro and lemon

    Once the mussels are open, add a generous handful of fresh cilantro. Cover again for about 1 minute, just long enough for the cilantro to wilt into the broth. Finish with a squeeze of fresh lemon juice.

Notes

Storage

Store any leftover mussels and broth in an airtight container in the refrigerator for up to 2 days. While the broth’s flavor becomes even more delicious as it sits, mussels are at their best when enjoyed fresh, so I recommend eating leftovers within a day or two.

Reheating

Gently reheat the mussels and broth in a saucepan over medium-low heat until just warmed through. Avoid bringing the broth to a boil, as overcooking can make the mussels tough and rubbery.
If the broth has thickened slightly in the refrigerator, stir in a splash of seafood broth or water while reheating to loosen it.

Can You Freeze It?

I don’t recommend freezing this recipe. While the broth freezes fairly well, the mussels can become tough and chewy once thawed and reheated. For the best flavor and texture, enjoy this dish fresh or within a couple of days of making it.
