  • Honey: Honey adds some sweetness but you can also use maple syrup or you preferred type of sweetener.
  • Vanilla extract: A touch of vanilla extract helps bring all the sweet flavors together in this recipe using cottage cheese.

Note: Feel free to change up the ingredients based on what you’ve got on hand; use a different fruit, use your favorite cookie crumbs instead of graham crackers or mix in some chocolate chips.

How To Make Frozen Strawberry Shortcake Frozen Pops

  1. Place the cottage cheese, strawberries, honey, vanilla extract and graham crackers in the food processor and process until some chunks remain for texture.
  2. Remove the strawberry cottage cheese mixture from the food processor and pour it into silicone cubes.
  3. Sprinkle the tops with small chunks of fresh strawberries and crumbled graham crackers.
  4. Insert a lollipop or popsicle stick into the mixture. The mixture should be thick enough so that the sticks stay put.
  5. Freeze for 2-3 hours or until solid enough to be removed from the cubes.

Yes, both ricotta and cottage cheese can be used to make these strawberry pops.

can I make these pops into full popsicles?

If you have a popsicle mold you can use this mixture to make popsicles. Note the freezing time may be longer.

Can I use a different fruit to make these POPs?

Yes, any fruit will work. You can try using raspberries, blueberries, peaches, or whatever you have on hand. Just make sure to process them into small pieces so they blend with the cottage cheese.

Storage

After the pops have frozen and are easy to remove from the silicon mold you can transfer them to a container and store them in the freezer for up to 3 months. If you have space, you can keep them in the mold until you are ready to eat the pops.

Ingredients 

  • 10 oz cottage cheese
  • 1 cup strawberries reserve 2 tbsp
  • 8 graham crackers reserve 2 crackers
  • 2 tbsp honey
  • 1/2 tsp vanilla extract

Instructions 

  • Add cottage cheese, strawberry, honey, vanilla extract and crumbled graham crackers to a food processor.
  • Pulse until the ingredients have incorporated. Do not over process, the goal here is to leave some chunks of strawberries and cracker pieces for texture.
  • Transfer cottage cheese strawberry mix into the silicone cubes.
  • Top cottage cheese mix with small chunks of fresh strawberry and crumbled graham crackers. Then insert lollipop or popsicle stick. Because this is a thick mixture the sticks should be able to stay put.
  • Transfer to the freezer for at least 2-3 hours before serving.
