How To Peel Yuca
There are two ways to peel yuca, here they are;
Option 1: Slide a very sharp knife underneath the bark so that it lifts slightly. Then continue to lift and slice the bark off around the yuca until no more bark remains.
Option 2: Place yuca round on a cutting board. Then slice the yuca from top to bottom much like you would slice a pineapple (see pictures above)

- Cooked/ boiled yuca: Follow this recipe for boiled yuca.
- Kielbasa: This recipe uses beef kielbasa but any type of sausage will work.
- Butter: Use salted or unsalted butter for sauteeing.
- Onion: A sliced onion, any type will work.
- Parmesan cheese: Use freshly grated parmesan for the best taste.
How To Make Yuca and Kielbasa
Step 1: Slice the kielbasa and set it aside.
Step 2: Sauté the onion in melted butter in a cast iron skillet and then add the cooked yucca and sauté until golden brown. Transfer the mixture to a plate.
Step 3: Add the kielbasa and fry on both sides, return the yuca to the skillet and sprinkle with parmesan cheese.
Step 4: Broil for 3 minutes on high, until the cheese has melted and yuca has golden edges. Serve with fresh herbs and more parmesan cheese.
Tips and Variations
Change up the kielbasa: Use any type of kielbasa; linquica, chorizo, Italian sausage or even chunks of chicken or chunks of beef.
Swap the cheese: Parmesan adds both a cheesy and salty flavor but you can use asiago, Gran Padano or Romano.
Toss in some bacon: Salty bacon always adds tons of flavor.
Change up the herbs: Instead of parsley garnish with fresh rosemary, basil or oregano.

Ingredients
- 4 cups cooked/ boiled yuca
- 12 oz beef kielbasa
- 6 tbsp butter
- 1/2 onion sliced
- 2 tbsp grated parmesan cheese
Instructions
- Slice the kielbasa on an angle. Set aside
- Melt butter in a cast iron skillet. Add in onion slices and cooked/ boiled yucca. Sauté until golden brown (about 10 minutes). Transfer to a plate
- Toss in kielbasa and fry on both sides until heated through (about 3-4 minutes each side).
- Return yuca to the skillet. Sprinkle with parmesan cheese.
- Broil for 3 minutes on high, until cheese has melted and yuca has golden edges.
- Serve with fresh herbs and more parmesan cheese.
