Baking reminds me of my late Grandmother. She was the best teacher because she didn’t cook. She made us cook, while she explained why we must always stir the batter in one direction (flow movement) or shake the butter-making jar for hours (at least what it felt like) while she explained the process of separating butter from buttermilk. Back then I wasn’t interest in the lesson, although it stuck on me due repetition but I most certainly enjoyed the results of whatever we made together. Gluten-Free Honey Almond Flax Bread

Honey Almond Flax Bread

Ingredients 

  • 2 3/4 cups almond flour
  • 1 ripe banana mashed
  • 2 tbsp honey
  • 1 egg
  • 1 tbsp flaxseeds
  • 1 tsp baking powder
  • 1 tbsp old fashioned oats optional

Instructions 

  • Pre-heat oven to 325F degrees. Spray two mini loaf pans (5.75 in x 3 in. x 2 in) and set aside.
  • In a large bowl whisk the flour and baking powder to combine. Add in remaining ingredients (except oatmeal) and gently fold to combine. Sprinkle oats on top if you wish. This batter is a little on the thick side, no worries it will come out just fine!
  • Pour better in to the mini loaf pans. Bake for 15 mins or until edges start to brown. Insert a toothpick or fork to make sure it’s cooked through.
