Made with simple feel-good ingredients, this Honey Almond Flax Bread gives you the perfect start to a pleasantly sweet summer day. Gluten-Free Honey Almond Flax Bread When I think of a pleasant summer day, the picture of a quiet bright morning, the sun washing through the large windows and birds singing in perfect harmony, sets the scene for a tranquil start. At this hour the kids are fast asleep, so I settle in for quite date with coffee. Coffee, journaling and fresh baked goods suddenly become an inevitable concept, while thoughts fold into ideas, and ideas into creations, in such a marvelous way that only summer can explain. Gluten-Free Honey Almond Flax Bread This is my favorite time of year to bake. Time seem to stretch out like thin pizza dough, making this thing called breakfast -not only possible but quite pleasant too! What I decide to bake is intuitively connected to where my eyes land in the pantry, or spotting that ripe banana I just can’t get myself to throw away. As I reach to select a few pantry staples, I can already smell the aroma of a warm Honey Almond Flax Bread, proving its existence is already in process.

Baking reminds me of my late Grandmother. She was the best teacher because she didn’t cook. She made us cook, while she explained why we must always stir the batter in one direction (flow movement) or shake the butter-making jar for hours (at least what it felt like) while she explained the process of separating butter from buttermilk. Back then I wasn’t interest in the lesson, although it stuck on me due repetition but I most certainly enjoyed the results of whatever we made together. Perhaps she is looking down feeling proud of the foodie she has created -or maybe managing to fit in another lesson or technique through some intuitive channel. Either way I am deeply grateful for those sweet moments. Gluten-Free Honey Almond Flax Bread Sweet couldn’t be a better word to describe this Honey Almond Flax Bread. An all around feel good treat to pair with your morning coffee (and journaling, if you wish) or afternoon crave-satisfying snack. Made with few simple ingredients and 20 minutes of your precious free time, this Honey Almond Flax Bread is a tasty addition to your sweet summer days. This bread is not only totally delicious and satisfying but also packed with amazing feel-good ingredients to help you feel your best. Happy first day of Summer!

by Silvia Ribas
Prep: 5 minutes
Cook: 15 minutes
Total: 20 minutes
Servings: 4 -6 servings

  • 2 3/4 cups almond flour
  • 1 ripe banana mashed
  • 2 tbsp honey
  • 1 egg
  • 1 tbsp flaxseeds
  • 1 tsp baking powder
  • 1 tbsp old fashioned oats optional

  • Pre-heat oven to 325F degrees. Spray two mini loaf pans (5.75 in x 3 in. x 2 in) and set aside.
  • In a large bowl whisk the flour and baking powder to combine. Add in remaining ingredients (except oatmeal) and gently fold to combine. Sprinkle oats on top if you wish. This batter is a little on the thick side, no worries it will come out just fine!
  • Pour better in to the mini loaf pans. Bake for 15 mins or until edges start to brown. Insert a toothpick or fork to make sure it’s cooked through.
