Rice can arguably be one of the best side dishes there is, especially due to its versatility and easy to love flavor. As someone who grew up eating rice, I couldn’t imagine it otherwise but when you replace your beloved white rice for the healthier brown rice, you might want to consider cooking it in an Instant Pot.

Brown rice can take an unreasonably long time to cook which can be frustrating especially if you don’t have a lot of time. This said, if you don’t have an Instant Pot (which by the way, I highly recommend) you can still cook a bunch of brown rice on the stove and use it as a meal prep like this Brown Rice Shrimp meal prep, or freeze individual portions of it in mini containers like the ones I use. Brown rice is not something you want to cook everyday so be sure to make enough for later.

Instant Pot Cilantro Lime Brown Rice

Great side to many dishes, this Instant Pot Cilantro Lime Brown Rice is easy to make and a healthier alternative to white rice
Cook: 22 minutes

Servings: 4 servings

Ingredients 

  • 1 1/2 cups basmati brown rice
  • 1 1/2 cups filtered water
  • 1 tbsp olive oil
  • 1 pinch sea salt
  • 3/4 cup fresh cilantro minced
  • 1 whole fresh lime, juice

Instructions 

  • Add brown rice, water and oil to the instant pot and season with sea salt. 
  • Cover and turn venting knob to lock position. Cook on high pressure for 22 minutes and allow all pressure to release naturally
  • Open the pot and add in fresh cilantro and juice from one lime. Stir to combine. Serve

  1. Hi Silvia, I’m looking for a rice recipe to go well with my shrimp scampi I’m trying this week with my daughter’s family for their birthday meals. Wondering which rice recipe you’d suggest.

    1. Hi Shery! with shrimp scampi I usually like to make plain white rice/ or brown rice. I don’t have a recipe for plain white rice but it’s usually 1 1/2 cups of water per 1 cup of rice. I don’t rinse my rice. I add the rice to boiling water, then turn on low. Season with salt, a tbsp butter, garlic and onion powder. Cover and cook on low until all the water has been absorbed. Hope this helps!

      1. Before I saw your response I bought Basmati rice. Using your cilantro lime recipe. I figure lemon shrimp and lime rice will be yummy together.
