Call me Brazilian or something (I won’t be offended -'wink') but don’t you think that rice is the most perfect side dish to almost all meals?? This garlicky carrot brown rice is packed with flavor and much more nutritious then plan ol’ white rice (no offense cuz I like white rice too!), they both consist almost entirely of carbs however our beloved white rice has the bran and germ removed, which are the most nutritious parts of the grain.
By sautéing the rice with garlic, onions and carrots in oil, the flavors lock in which makes this rice simple irresistible!
It’s a very fragrant dish which invites people to gather around the table. Such a tasty rice and the perfect pairing to your meat of choice. Try serving with Baked Sea Scallops or this Chicken Spinach Pancetta for an exceptionally delicious meal!

Garlicky Carrot Brown Rice
Ingredients
- 1 cup brown rice
- 2 ½ cup water
- 2 tablespoon olive oil
- 1 small onion diced
- 2 garlic cloves minced
- ¼ teaspoon sea salt
- ½ teaspoon onion powder
- 2 med carrots cubed
Instructions
- Heat oil in a medium pan. Add onions and sauté until translucent. Add garlic, carrots, salt and onion powder. Stir and sauté for 2 minutes. Add brown rice, continue to stir and sauté until all the rice has been saturated with the oil, garlic and onion mixture (about 1-2 mins) then add the wetter and cover.
- Cook on medium low for 40 minutes or until all the liquid has absorbed. Stir once or twice in between.
