First of all, I apologize for the repetitive tomato recipes that I have been producing. Blame on the lack of creativity OR my love affair for tomatoes, either way I promise to stop throwing tomatoes your way but with all honesty I hope you are enjoying it. Every so often I come across someone who dislike tomatoes, which is a fair thing… but for the sake of this post Tomato isn’t just a fruit you grab, slice and eat. Tomato is a very important ingredient in the kitchen!!! So today I am actually sharing with you an ingredient (recipe). Have I been forgiven ?
The smart cook knows that a jar of tomato sauce is just as an important ingredient as oils, spices and for some of us garlic. A handful of jarred tomato sauce is a piece of gold, so you can only imagine what a of homemade, home grown, roasted tomatoes sauce means ?! …almost too good to use.
Having a few jars of this roasted tomatoes sauce not only means more flavor being added to my cooking but it also makes life a lot easier. Specially given the fact that this sauce has a lot of spices and flavor in it, that in most cases, this tomato sauce is all you really need.
Besides using this tomato sauce to delightfully enjoy over pasta, a nice tomato sauce can be used in hundreds of recipes. Some of my favorites are beef and fish stews, baked beans, pizzas, soups, Mexican rice, international recipes, meatloaf, etc… the only thing you really need to worry about is making enough of it.
… and since I mentioned it, why not make enough to gift to your neighbor, your family, friends or someone in need. I gave a few jars away , it makes me feel happy to have share something I made and to make even more special, I used the tomatoes I grew in my home garden!

Roasting the tomatoes will reduce the acidity and make it much easier for those with sensitivity to acidic foods such as those with ulcers, to enjoy this delicious and nutritious ingredient. This process will also maintain the juices and add flavor, by roasting it with lots of garlic. Garlic, is well known for it’s unique and strong flavors, but when roasted it becomes sweet and simply delicious. Roasted tomatoes replaces the stove top cooking process and although it takes more time, it’s actually easier to do if you have an errand to run and will be out of the house. By the time you get back your tomatoes are nice and roasted and just ready to be blended in and added to your meal.
This beautiful sauce is simply mouthwatering. Gladly this isn’t my last batch of the year as I still have (more then) a few tomatoes in my garden.
Although I promised not to make any more tomato sauces or recipes for-a-while, I will certainly continue to enjoy my jarred sauces in many of my favorite recipes.

Roasted Tomatoes Sauce
Ingredients
- 16-18 lg tomatoes
- 1 lg onion
- 6-8 garlic bulbs
- 3/4 c olive oil
- basil
- italian seasoning
- oregano
- salt & pepper
Instructions
- Wash and cut off a slice from the top of the tomatoes.
- Arrange the tomatoes on a large baking sheet.
- Pour all the oil over the tomatoes and add the spices.
- Cut up the onion and garlic and spread around the baking sheet.
- They don’t need to be cut up small because it will all get blended in at the end.
- Bake in oven at temperature of 280F for about 2 hours.
- Remove from oven and let it cool off for 5 minutes
- Blend all the tomatoes and distribute in jars.
