Spicy Roasted Chickpeas

Take your snacking game to the next level with these spicy roasted chickpeas or add to your favorite salads, soups, wraps, or food bowls.
Prep: 5 minutes
Cook: 25 minutes
Total: 30 minutes

Ingredients 

  • 2 15 oz can chickpeas
  • 1 tbsp olive oil
  • 1 tbsp ancho rub*
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • sea salt & pepper to taste

Instructions 

  • Pre-heat the oven to 450F degrees.
  • Wash and since the chickpeas and pet them dry with a paper towel.
  • Add all the spices and stir to combine.
  • Bake for 15 mins. Give it a little stir and bake for an additional 10 minutes.
  • Eat warm or cold. Store in an air tight jar once cooled off and refrigerate for up to 10 days.

Notes

If you cannot find the Ancho Rub in a store, you can mix your own using these spices: ancho powder, salt, cumin, brown sugar, coriander, pepper, garlic and thyme.
