Easy Baked Peaches & Raspberries

Sometimes all to need to brighten up a simple dessert such as cake, cookie or ice cream is a tasty, juicy and sweet topping. With this in mind and because I am deeply obsessed with fruits, bonus if seasonal -I decided to make a simple and easy bake featuring two delicious summer fruits that are the perfect addition to any dessert, or by itself!

The key to making the most of your baked fruit dessert topping is to allow it enough time to macerate. Think of marinating your meat or vegetables but in fruit-y version. The ideal would be an overnight macerate, however 30 minutes is enough time to get the peach juices flowing and sweeten things up.

This Easy Baked Peaches and Raspberries is a delicious base to ice creams, or juicy topping to your favorite desserts!

Easy Baked Peaches & Raspberries

Brighten up all your desserts with this delicious and Easy Baked Peaches and Raspberries topping!
Prep: 10 minutes
Cook: 30 minutes
Total: 40 minutes
Servings: 6 -8 servings

Ingredients 

  • 5 peaches sliced
  • 1 cup raspberries
  • 1 tbsp Xylitol sugar
  • 2 tbsp honey

Instructions 

  • Place peach slices and raspberries in a oven safe baking dish. Add honey and sprinkle with sugar, cover and let it macerate for at least 30 minutes (the longer the better, overnight works too!)
  • When ready to bake, pre-heat oven to 400F degrees. Remove cover and bake for 30 minutes.
  • Allow to cool off completely. Serve with ice cream or as a dessert topping.
