A Note from Me
I’m not Mexican, but as a Latina from Brazil, I’ve always loved playing with all the bright, bold flavors that make Latin cooking so special. Over the years, I’ve found so much joy in mixing those influences into my everyday meals, taking a little inspiration from here and there to create hearty, wholesome dishes that still feel light and nourishing. This ground turkey taco skillet is one of those recipes that is simple, flavorful, and full of that cozy “home-cooked” comfort we all crave.
Over the years, I’ve shared so many easy recipes with ground turkey meat, and it’s become one of my favorite ingredients to cook with. It’s light, versatile, and perfect for creating flavorful meals that fit any season. My Ground Turkey Butternut Squash Skillet has been viewed over a quarter of a million times and for good reason! It’s hearty, wholesome, and packed with everyday ingredients that come together beautifully in one pan.

Ingredients and Notes
- Ground turkey: I like using lean ground turkey for a lighter, protein-packed base. You can swap for ground chicken or even beef if that’s what you have on hand. I use 93% lean ground turkey here. It has enough fat to stay juicy and flavorful while still keeping the skillet light.
- Black beans: Canned black beans make this recipe quick and easy, but if you prefer homemade, try my Black Beans with Smoked Kielbasa they add an extra layer of rich, smoky flavor.
- Corn: Fresh, frozen, or canned, whatever’s most convenient. I love the little pops of sweetness it adds.
- Fire-roasted tomatoes: These give the dish that deep, slightly smoky flavor. Regular diced tomatoes will work too if that’s what you have.
- Onion: A yellow or white onion adds great flavor depth; cook it until soft and lightly golden for the best results.
- Red bell pepper: Adds a touch of sweetness and color but feel free to use orange or yellow if you prefer.
- Green chiles: Mild diced green chiles bring just the right hint of heat without overpowering. Skip them if you want it kid-friendly or substitute with jalapeño for extra spice.
- Paprika: Adds a warm, earthy tone. Smoked paprika works beautifully here for that subtle charred note.
- Mexican oregano: This gives the skillet a bright, earthy flavor that works beautifully with the tomatoes and green chiles. I keep the seasoning simple rather than using a packaged taco seasoning.
- Salt and pepper: Always to taste, and adjust at the end once everything has simmered together.
- Olive oil: For sautéing and bringing all those flavors together; avocado oil is a fine swap too.
- Cheese (optional): A sprinkle of shredded cheddar, Monterey Jack, or cotija on top adds creaminess and flavor, but it’s totally optional if you want to keep things lighter.

How to make ground turkey taco skillet
- Warm up the skillet – Start with a large skillet or casserole, something roomy enough to hold all the good stuff. Drizzle in a little olive oil and warm it over medium heat while you chop the onion and pepper.
- Sauté the veggies – Add the onion and red bell pepper to the pan and cook until they soften and start to get a little golden around the edges. This is where the flavor starts to build, so take a minute to let the kitchen smell amazing.
- Cook the turkey – Add the ground turkey and break it apart with your spoon as it cooks. Season with salt, pepper, paprika, and Mexican oregano. Stir often until the meat is browned and no longer pink.
- Add the flavor layers – Stir in the green chiles, corn, black beans and fire-roasted tomatoes. Everything should look colorful and cozy at this point, like dinner is really happening.
- Simmer and blend – Reduce the heat a little and let everything simmer for 5–10 minutes. The flavors will come together beautifully, and the sauce will thicken slightly. Taste and adjust the seasoning if needed.
- Finish and serve – If you’re adding cheese, sprinkle it right on top while the skillet is still warm so it melts perfectly. Garnish with fresh cilantro and serve it straight from the pan with warm tortillas, rice, or a dollop of guacamole, whatever fits your weeknight vibe.
SILVIA’S TIP
➜ Don’t overcook the turkey. Ground turkey is lean and can dry out more easily than beef. Cook it just until no longer pink before adding the remaining ingredients.
➜ Drain the beans and corn well. This keeps the finished skillet hearty rather than watery.
➜ Finish with lime. A squeeze of fresh lime right before serving wakes up all the warm, savory flavors.
➜ Meal prepping? Store avocado, cilantro, sour cream and other fresh toppings separately and add them just before serving.
Want to know what skillet I used? For this recipe I used the Lodge Cast Iron Casserole. This pan has dual handles and comes with a lid. Color is oyster white

How I Turn This Skillet Into More Than One Meal
This Turkey Taco Skillet is one of those meals that just keeps giving, a true dinner that stretches so you don’t have to. It’s hearty enough for a full meal, but flexible enough to turn into something new the next day. Here are a few of my favorite ways to serve and reinvent it:
- Classic taco night: Spoon the turkey mixture into warm yuca tortillas and pile on your favorite toppings; avocado, sour cream, salsa, a sprinkle of cheese, maybe a few jalapeño slices if you like a little heat.
- Over rice or quinoa: A quick way to turn it into a burrito bowl-style dinner. Add a handful of greens or shredded lettuce for extra freshness.
- Turkey Stuffed peppers: Use any leftovers to fill halved bell peppers and bake until tender. It’s a whole new meal with zero extra effort.
- Next-day loaded nachos: Spread tortilla chips on a sheet pan, top with the leftover turkey mix, and bake until crispy and bubbly.
- With eggs for breakfast: A spoonful of this skillet mix makes the best breakfast scramble or topping for a breakfast taco.
This is the kind of recipe that saves the day on a busy weeknight and somehow keeps feeding you all week long.

That’s wonderful Anne, I am happy that you are enjoying my turkey taco skillet recipe 🙂
The turkey made it Ugg – I’m sure beef would have been better. The beans and veggies were great tho.
Thanks for giving the recipe a try! Ground turkey definitely has a different flavor and texture than beef, so it may just not be your favorite. I’m glad you enjoyed the beans and veggies, though! You can absolutely make this skillet with ground beef next time—I think you’ll enjoy that version much more.
