Ingredients 

  • 3 chicken breasts
  • 2 tbsp olive oil
  • 8 oz marinated artichoke hearts chopped
  • 4 oz marinated roasted bell pepper chopped
  • 1/2 cup kalamata olives sliced or chopped
  • 3 tbsp fresh oregano minced
  • 4 oz fresh mozzarella cheese halved
  • salt and pepper to taste

Instructions 

  • Season chicken breasts with salt and pepper to taste. Set aside.
  • Heat 1 tbsp olive oil in skillet then sauté chicken on both sides until there is a golden crust (about 5 minutes each side)
