  • Chicken breasts – Choose boneless, skinless chicken breasts.
  • Olive oil – Extra virgin olive oil is best but any kind will work.

  • Oregano – Use fresh oregano, minced.
  • Mozzarella – Fresh mozzarella cheese, halved, adds creaminess.

Silvia’s Tips

Pat the chicken dry before cooking.

Before seasoning, use paper towels to pat the chicken dry. Removing excess moisture helps the chicken develop a beautiful golden crust instead of steaming in the pan.

Don’t rush the sear

Let the chicken cook undisturbed for a few minutes before flipping. A good sear locks in moisture and creates those flavorful browned bits on the bottom of the pan that become part of the sauce.

Choose good-quality feta

I always recommend buying feta packed in brine instead of pre-crumbled feta. It has a creamier texture and richer flavor, and it softens beautifully over the warm chicken without completely melting.

Finish with fresh herbs and lemon

A sprinkle of fresh parsley, basil, or oregano and a squeeze of fresh lemon juice right before serving brightens all the Mediterranean flavors and brings the dish to life.

Don’t skip the pan juices

One of my favorite parts of this recipe is the flavorful sauce that forms as everything cooks together. Serve it with crusty bread, orzo, rice, or even roasted potatoes so none of that delicious sauce goes to waste.

Great for meal prep

Store leftovers in an airtight container in the refrigerator for up to 3 days. The flavors continue to develop overnight, making this one of those meals that’s just as delicious the next day.
