I have lived in this country for 20 years now, and I still get amazed by how brutally hot it gets in the summer months, given the cold blast we deal with most of the year.

90F degree days with humidity forces me to adhere to a water based diet, and that’s when I discovered this amazing Watermelon Feta Salad.

No, I did not invent this combination but it’s one that I have been wanting to try. Some other watermelon-feta combinations that I’ve seen are;

  • watermelon – feta – blueberry
  • watermelon – feta – cucumber
  • watermelon – feta – arugula
  • watermelon – feta – strawberries

Basically, the watermelon-feta combo is like an open canvas. Use your imagination and have fun!

What I found is, the freshness of the watermelon goes perfectly with the saltiness of the feta cheese. Additionally, the fresh mind and basil adds a great complementary flavor.

Overall this is a fruit salad that’s simple, easy, super refreshing and hydrating, perfect for those hot humid 90F degrees days. Another tasty combination that I have been super into lately is this Cantaloupe Peach Salad with fresh mozzarella cheese. It’s a real treat!

To my watermelon feta salad I decided to include garden tomatoes, since I have so many growing. I also felt that a splash of lemon juice with sweet honey would tie all the flavors together nicely. Oh, it did!!

In my trials I could not decide whether I should use mint or basil, so I choose both. You can definitely choose one over the other, and the salad will still taste amazing.

I have been eating this watermelon feta salad all three meals. It’s so delicious and refreshing, I honestly cannot get enough of it.

for breakfast – I top with my favorite yogurt, an extra drizzle of honey and granola

for lunch – add a side of spinach or arugula, extra feta and fresh ground pepper

for dinner – add sausage + veggie kabobs or grilled shrimp

Watermelon Feta Salad

Fresh fun and MEGA hydrating, this watermelon feta salad with mint, basil and fresh garden tomatoes is a summer must try!

Ingredients 

  • 8 cups watermelon, cubed
  • 1 cup cherry tomatoes, quatered
  • 3/4 cup crumbled feta
  • fresh mind + basil leaves
  • 1 lemon, juiced
  • 3 tbsp honey

Instructions 

  • Cut up watermelon and tomatoes and add to a large bowl
  • Add fresh mind and basil leaves. Use as much or as little as you like. Give salad a good mix.
  • Top with crumbled feta cheese.
  • In a small bowl whisk lemon juice and honey. Pour over the salad and serve.
