Summer is finally here and with that comes a shift from indoor cooking to outdoor cooking. And, of course, with outdoor cooking and grilling we get S’mores. Though traditionally prepared over a campfire, this version of this famous recipe lets you enjoy all the goodness of summertime s’mores inside.

What are S’mores?

In case you didn’t know, s’mores is actually a contraction of the words ‘some’ and ‘more’ as anyone indulging in this sweet treat would obviously want to eat more of it.

Popular in North America, s’mores are often prepared by cooking a marshmallow over an open flame and then eating it sandwiched between graham crackers and a piece of chocolate. This creation dubbed s’mores is ooey, gooey, chocolatey and super yummy.

Though similar in taste, this brownie s’mores dip has all the same mouthwatering flavors in a dip. A brownie base with added chocolate chunks is layered with more chocolate chunks and marshmallows and then broiled so the marshmallows turn a golden brown. Graham crackers are then dipped into this chocolate-marshmallow goodness so you get the amazing fusion of flavors and textures.

  • Brownie mix: Pick up a box of brownie mix at the grocery store. Any type of brownie mix will work. Or, if you like, prepare your favorite brownie recipe.
  • Chocolate chunks: Use any type of chocolate chunk or chocolate chip; semi-sweet, dark or milk chocolate are all good options.
  • Marshmallows: You can use a combination of full-sized or mini marshmallows or for more color used colored marshmallows.
  • Graham crackers: Traditional graham crackers are used for dipping. You can also use gluten free graham crackers if you wish.

How To Make Brownie S’mores Dip

  1. Follow the instructions on the brownie package and add a handful of chocolate chunks to the batter.
  2. Bake the brownies in a cast iron skillet. If you don’t have a cast iron skillet, bake in a square baking pan instead.
  3. Remove the brownies from the oven and switch the oven to broil.
  4. Add more chocolate chunks on top of the brownies and add a layer of marshmallows.
  5. Broil for a few minutes until the marshmallows turn golden brown and the chocolate melts.
  6. Serve with graham crackers for dipping.

Note: Feel free to play around with the type of brownies you use, try using a blondie recipe, use caramel or peanut butter chips instead of the chocolate chunks or use your favorite wafer for dipping.

You can store leftover brownies and marshmallows in an airtight container for 2-3 days. Reheat under the broiler so the marshmallows get gooey again.
