Personally, I’ve got to thank my Grandmother for introducing me to this mega beneficial vegetable at young age, otherwise I might have fallen into the judgement zone and refused to try it because it is too red, looks like blood, stains everything and taste like a handful of dirt mixed with a little sugar.

- Place beets in sheet pan. Drizzle with olive oil and add a pinch of sea salt.
- Bake at 375F degrees for about 35 minutes or until you can pierce through with a fork without a lot of effort.
- Transfer roasted beets to a plate and add a splash of balsamic vinegar.
- Serve with your favorite plant based yogurt and fresh dill or chives. Feel free to add an extra drizzle of olive oil

- 4 – 5 beet roots
- 1 tbsp olive oil
- pinch sea salt
- 1/2 tbsp balsamic vinegar
