  1. a large sheet pan. Any large sheet pan or baking sheet will work. The veggies should not be over crowded to ensure even cooking
  2. your favorite sausage of course. I am using a Italian spicy sausage but any sausage will work, pork or chicken.
  3. bell peppers, a variety of colors.
  4. onion sliced lengthwise, so all the veggies are about the same size and shape.
  5. for seasoning and flavorings I used olive oil, salt, pepper and oregano. I mention in the recipe cart that you can use any seasoning you like

  1. In a small bowl whisk the oil, salt, pepper and oregano. Set aside
  2. Arrange sausage and veggies in a baking sheet. Be sure to spread the veggies evenly to ensure that everything cooks at the same pace.
  3. Pour oil and oregano over the sausage and veggies. Toss everything to coat.
  4. Bake in the oven at 425F degrees for 25 minutes or until the veggies have softened and sausage is golden brown.

  • 5 lb italian sausages mild, spicy and any flavor you like
  • 3 whole bell peppers green, red and orange; sliced
  • 1 whole onion sliced lengthwise
  • 1/4 cup olive oil
  • 1/2 tbsp oregano
  • salt and pepper to taste

    1. Hi Bobbie, you use raw sausage. If using fully cooked sausage, all you need to do is re-heat it. In this case make and recipe and cook without the sausage, then in the last 10 minutes add your fully cooked sausage. Otherwise you’ll end up with overcooked dried sausage. Hope this helps!
