It’s soup season and I can feel the excitement in the air! Sure it is never easy saying goodbye to summer, but transitioning to a cozy soup season before winter hits, isn’t so bad.

Speaking of soup I have soooo much in store for us this season. A couple weeks back I made this delicious Instant Pot Cabbage Roll Soup and when I tell you it is delicious, I mean it’s freaking delicious! Four batches made in two weeks might tell you how we really feel about this soup.

I also made a plant-based (vegetarian) variation of my Chicken Wild Rice Soup, this Instant pot Mushroom Wild Rice Soup is warming, nourishing and packed with plant nutrients (phytonutrients). Now, back to the cabbage roll soup, which came about after an accidental encounter with a head of cabbage. This has opened my tastebuds widely to the world of cooking with cabbage.

I am no going to lie, cabbage has never been my go to choice of veggie. But once in a while I grabbed a head or pick one up at my CSA and didn’t give it the time of day. This all changed when I decided to make this cabbage roll soup!

This instant pot cabbage roll soup is made with few ingredients, a simple base with seasoned beef, then we load it up with gut friendly cabbage, carrots, immune boosting broth and tomato puréed and the result is nothing short then amazing. Simple, flavorful, nourishing, warming and super tasty!

Cabbage is a low-calorie vegetable that is rich in vitamins, minerals and antioxidants. According to The Healthline 1 cup of raw green cabbage contains:

  • Calories: 22
  • Protein: 1 gram
  • Fiber: 2 grams
  • Vitamin K: 85% of the RDI
  • Vitamin C: 54% of the RDI
  • Folate: 10% of the RDI
  • Manganese: 7% of the RDI
  • Vitamin B6: 6% of the RDI
  • Calcium: 4% of the RDI
  • Potassium: 4% of the RDI
  • Magnesium: 3% of the RDI

how to make instant pot cabbage roll soup

  • Turn instant pot on sauté mode. Add the oil, when hot add ground beef, onion and garlic. Season the beef with salt, pepper and fresh thyme and sauté until meat is brown but not necessarily cooked through (about 10 minutes)
  • Add remaining ingredients; carrots, puréed tomatoes, cabbage, broth and bay leaf. Give it a good stir.
  • Cover the instant pot. Cancel sauté mode and lock valve. Cook on high pressure for 10 minutes. When done allow for NPR. 10 minutes of natural pressure release should be plenty, then quick release remaining pressure.
  • Garnish Cabbage Roll Soup with fresh herbs and serve.

what to serve with cabbage roll soup

  1. I love serving any soup with crusty bread, but even a slice or two of sandwich bread will do.

Ingredients 

  • 1 lb grass-fed ground beef
  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 2 cups carrots, sliced or diced
  • 14 oz puréed tomatoes* pure no sugar added
  • 1/2 head green cabbage, chopped into medium chunks
  • 32 oz broth* whole30, keto approved
  • 1 bay leaf
  • fresh thyme
  • salt and pepper, to taste
