Ingredients 

  • 1 pineapple cut into strips
  • 1 cup light brown sugar
  • 1 tsp cinnamon
  • 2 tbsp honey

Instructions 

  • Combine brown sugar and cinnamon in a baking dish.
  • Cut Pineapple into long strips then transfer to baking dish with cinnamon sugar. Toss to coat pineapple in sugar mix. Do this with all the pineapple strips. BONUS if you can let pineapple marinate in sugar mix for 10-15 minutes.

  • Pre-heat grill to 450F degrees. Spray the grill so the pineapple doesn't stick.
  • Grill pineapple on both sides for about 10 minutes each side or until golden brown.
  • Transfer grilled pineapple to baking dish and drizzle with honey. Serve with mint leaves. See notes

Notes: Feel free to add a few cloves to the grilled pineapple. Once the pineapple juices and the sweetness of honey mingle with spicy cloves you get a delicious explosion of flavor.
