I’ll be honest, I’m usually not a big fan of chicken unless it’s built on real flavor like this braised French onion chicken. As someone who cooks chicken regularly for my family, I’ve learned thighs are far more forgiving than breasts. That’s exactly why these Marry Me Chicken Thighs stand out. The sauce is rich, bold, and deeply comforting, turning a simple cut of chicken into something truly special.

This one-pan Chicken Thighs with Marry Me Sauce is a crowd please that’s easy enough for a weeknight dinner yet special enough for date night.
Over the past few months I have tasted many variations from marry me chicken sauce with thighs and chicken breasts, marry me chicken with pasta, playing with dairy-free marry me chicken options. Ultimately we found ourselves craving and making this Marry Me Chicken Burger and these one-pan marry me chicken thighs on repeat. In the colder months I learned to rely on this Marry Me Chicken Soup for a comforting bowl without overthinking dinner.

Ingredients and substitutions
- chicken thighs (about 9-10) bone in, skin-on chicken thighs. Can substitute for boneless and skinless chicken thighs or chicken breasts.
- sun-dried tomatoes in oil and chopped. I like the bruschetta-style sun-dried tomatoes or sun-dried tomato that is already chopped and preserved in oil.
- red onion finely chopped. Use shallots for a similar flavor profile.
- heavy cream but you can use half and half, milk or dairy-free alternatives such as coconut cream or your favorite dairy-free milk. I have tested these options and they worked well. Note that coconut cream changes the flavor the most
- olive oil and butter both needed at different times
- freshly grated parmesan cheese, avoid the pre-shredded cheeses for better flavor and to avoid weird texture. I also tested this recipe with a variety of dairy-free cheese and was pleased with the results.
- chicken broth or chicken stock, this will help with texture control
- kalamata olives – my mom never makes a saucy chicken recipe without adding a handful of olives and it seems that I have followed her footsteps. If you are a fan of olives you’ll really enjoy it in this one-pot chicken thighs recipe
- seasonings are oregano, salt and pepper. Optional to add a pinch of red pepper flakes
👉🏻 Want thicker sauce? to thicken the sauce an optional route is to add 1 tsp of cornstarch whisked into 1 Tbsp cool broth or 1 Tbsp butter + 1 Tbsp flour (roux) before liquids.




How to make the best Marry-Me Chicken
Here are the steps on how to get juicy chicken thighs every time;
- Season & sear. Pat thighs dry; season with salt and pepper. Heat oil in a large skillet over medium-high. Sear thighs 5-6 min per side until deeply golden (they’ll finish in sauce/oven). Transfer to a plate.
- Build the sauce. Lower heat to medium. Add onions; cook for about 1 minute. Stir in sun-dried tomato and oregano.
- Pour in broth and cream; simmer 2–3 min. To thicken the sauce whisk in cornstarch slurry and simmer 30–60 sec or make a quick roux (melt butter, stir in flour, then add liquids). Use the chicken broth to adjust thickness.
- Finish the chicken. Return thighs (and juices) to the skillet. Simmer 8–10 min, until the temperature 165°F (ultra-tender at 170–175°F) (see oven options in recipe card)
- Finish & serve. Fold in fresh cilantro, basil or thyme. Rest for 3 minutes. Spoon sauce over the chicken and serve.
What to serve Marry Me chicken recipe with?
Serve with: creamy butternut squash risotto, buttery cauliflower mashed potato for a low-carb option. Yuca mashed potatoes for a low-glycemic alternative. My favorite is paired with a simple brown rice, roasted asparagus, sautéed green beans, artisan crusty bread for dipping or serve with my Air Fryer Garlic Bread for an explosion of flavor.
PRO TIPS FROM SILVIA’S KITCHEN
✓ The skillet – for this recipe I am using my Lodge 3.6 Quart Enameled Cast Iron Skillet. This skillet has a few things that will make the recipe easier such as lid for simmering, duo handles in case you want to finish the dish in the oven and it’s oven safe. Choose something that offers similar qualities.
✓ Pat chicken dry first: Removing surface moisture helps get that golden-brown crust quickly.
✓ Deglaze with broth: After searing, scrape up the golden brown bits (fond) with broth —they dissolve into the sauce and boost flavor.
✓ Sun-dried tomato oil hack: Use 1 tsp of the oil from the tomato jar in place of part of the olive oil for searing — it infuses even more flavor into the chicken.

✨ Leftovers tip: When reheating, add a splash of broth or cream to loosen the sauce and bring it back to silky perfection.

Yes! make sure the chicken is the same size and thickness. Sear and either simmer to finish or bake for 10–12 minutes at 375°F. Thighs are more forgiving and stay juicier.

Marry Me Chicken Thighs Recipe
Equipment
Ingredients
- 9 chicken thighs bone in, skin on
- 2 tbsp olive oil
- 3 tbsp sun dried tomato (see notes)
- 1/2 cup red onion chopped small
- 1/2 cup heavy cream DF milk, coconut cream
- 1/2 cup chicken broth
- 2 tbsp butter
- 1/2 cup kalamata olives optional
- 1/2 tbsp oregano
- 1 cup parmesan cheese DF shredded cheese
- salt and pepper to taste
Instructions
- Start by seasoning the chicken thighs generously with salt and pepper on both sides. Although you can adjust the seasoning later on if needed, this is the only time we'll be seasoning this chicken dish.
- Heat oil in a large skillet (see notes on the skillet). Sear chicken thighs over medium high heat, skin side down first, until skin is crispy and golden brown. This will give the chicken a beautiful and delicious finish. Turn the chicken and sauté on the bottom side. About 5-6 minutes each side. Transfer chicken to a plate.
- To the same skillet melt butter over medium low heat. Sauté the red onions until soft then stir in sun dried tomatoes. Let these ingredients cook together and merge the flavors.
- Add the oregano heavy cream and chicken broth. Whisk together, let it simmer for a couple minutes then stir in the cheese.
- Transfer chicken back into the skillet. The chicken thighs do not need to be fully submerged in marry me chicken sauce. Add olives, if using. Turn the heat to a low simmer, cover and let the chicken finish cooking for about 10 minutes.
- The marry me sauce will reduce and thicken and chicken will be fully cooked when the internal temperature reaches 165°F (ultra-tender at 170–175°F).
- Finish with your favorite fresh herb and serve.
- 👉🏻 Oven option: after placing the chicken back in the skillet, bake at 375°F for 10–12 min until done.
- 👉🏻 Broil option: after finishing the chicken on stove-top bring to a broil for 2-3 minutes to crisp up the chicken skin and add a golden finish.
