Red lentils will cook up the fastest if you are looking for a quick weeknight dinner. Green and brown lentils can usually be found canned so they just need to be rinsed and added to the soup. If you prefer to use dried, you may need to cook the soup longer or boil them beforehand. Red lentils are only available dried but cook quickly so there’s no need to boil them in advance.
